The Introduction reviews human breast anatomy, biochemistry and physiology of human lactation, and human milk composition with emphasis on lipids and fatty acids (chapter 1.1 and 1.2). Present knowledge on perinatal fatty acid transport, parameters of essential fatty acid (EFA) status and the role of long chain polyunsaturated fatty acids in perinatal growth and development are discussed in the third part of the Introduction (chapter 1.3).
